Ropa vieja (Spanish pronunciation: [ˈro.pa ˈβje.xa]; "sometime apparel") is a dish with regional variations in Latin America, the Philippines, and Spain. Information technology normally includes some form of stewed beefiness[ane] and tomatoes with a sofrito base.[ii] Originating in Espana, it is known today as one of the national dishes of Republic of cuba.[three] The name ropa vieja probably originates from the fact that it was oft prepared using food left over from other meals.[iv]

The dish's origins appear to have showtime arisen among the Sephardic Jews of the Iberian Peninsula,[5] [6] as a slow-cooked stew that was prepared to be eaten over the course of a traditionally observed Shabbat, a kind of cholent chosen "handrajos" (similar to the Spanish discussion "andrajos").[vii] [8] [ix] Somewhen this dish spread to North Africa and to the Canary Islands of Spain.[10] [11]

The dish is believed to exist had brought to the Americas past immigrants from the Canary Islands and was first reported to take been cooked in Cuba in 1857, but today is well known every bit a Cuban national dish.[12] [13]

Regional variations [edit]

  • Canary Islands - Ropa vieja is served with both garbanzo beans and potatoes[13] [11] Some versions of the dish in the Canaries include other meats, including craven and pork.[ citation needed ]
  • Republic of colombia - the dish is known equally both "ropa vieja" and "carne desmechada" and is oft served with rice, fried plantains, or arepas.[xiv]
  • Cuba - ropa vieja is well known equally a national dish (most often served with rice and black beans), only famously was off the menu of many ordinary Cubans for a time [10] during the Special Menses of Cuban history, afterwards the fall of the Soviet Spousal relationship. While some Cubans improvised, substituting lamb [15] or pork[16] for beef during this time (or made special efforts to detect beef to make the dish) [17] the dish became commonly bachelor in Cuba once again, starting in 2010 with the advent of independent and legal paladares in 2010.[xv] Ropa vieja is especially popular amidst Cuba's Jewish customs.[xviii] Ropa Vieja in Cuba is oft served with congri rice and fried plantains.[19]
  • In Nicaragua the dish is called carne desmenuzada, or less usually ropa vieja. Information technology is fabricated with dark-green bell peppers, onions, garlic, table salt, Worcestershire sauce, sugar, and mustard. It is normally served with white rice or aslope gallopinto (national dish of Nicaragua), and fried cheese, fried or boiled plantains.[20]
  • In the Philippines ropa vieja includes fish sauce and is served with jasmine rice.[x]
  • Kingdom of spain - ropa vieja is a make-practise kind of dish in which a cook would stew leftovers in a sofrito base.[13] Chickpeas are nearly included in the Spanish version of this dish.[21]
  • Venezuela - Like its neighbour Colombia, the dish is chosen both "ropa vieja" and "carne desmechada."[22] The dish is often served equally a filling for arepas[23] likewise as other dishes,[2] and is commonly prepared using the herb annatto to provide deeper color.[24] Ropa vieja is also famously a component of the plate known as the Pabellón criollo.[24] [25]
  • Other regions - The dish is popular in Honduras,[26] Puerto Rico,[27] [28] and other parts of Latin America, also as amongst immigrant communities in the United States.[29] [30]
